Well, this year I am not working as much, and have been cooking at home a LOT more! And Pinterest has been my new source for fun recipes! Here is one that worked out really well for us the other night. The corn flakes are always easy to have on hand, and I love honey mustard. I also thought this is probably a good recipe for kids to make and eat! The original recipe contained dried dill, but I am not a fan of dill, so I just added salt and pepper, and a little garlic powder. Dip in honey mustard, roll in cornflakes, and bake to crispy! How can you go wrong on a busy week night?
Our two key ingredients: Honey Mustard Dressing and Corn Flakes!
I recommend two bowls. I have these shallow soup bowls that work well for dipping and dredging. I just crunched the corn flakes with my hand so they aren’t to fine.
Not a great picture, but here is my dinner: Honey Mustard Crispy Chicken, Spinach and Tomato Rice and berries! Yumm!!
Honey Mustard Crispy Chicken
2/3 cup honey mustard dressing(plus more for dipping chicken in)
1/8 tsp salt
1/8 tsp pepper
1/2 tsp garlic powder
1 cup cornflake crumbs
4 4-oz chicken breasts
Preheat oven to 425 degrees F. Line a sheet tray with foil and spray with cooking spray. Place honey mustard in a shallow bowl and mix with salt, pepper and garlic powder. Place cornflake crumbs in another bowl. Dip chicken into honey mustard, then into cornflakes, pressing them to stick. Place on baking sheet, and bake for 15-20 minutes until chicken is golden and cooked through. Drizzle with dressing and enjoy. Makes 4 servings.
**This was originally a Weight Watchers recipe, and they used light or fat free dressing and added 1/4 tsp dried dill and 1 TBSP chopped green onions. Feel free to adapt it to your needs. Weight Watchers Points value: 7 for 1 chicken breast and 1 1/3 TBSP dressing.
