Ahhhh, the microwave. A little box that can do so much. How many of us use it to simply reheat pizza and make popcorn? Well, here are a few new ways to make the most of that handy cooker!
- Make toasted coconut- Spread 1/2 cup shredded coconut on plate. Microwave on High 30 seconds. Stir, then cook 2 minutes, stirring every 30 seconds, until golden brown.
- Turn corn tortillas into (healthy) crunchy chips. Sprinkle 4 tortillas with salt, and cut into quarters. Working in batches, place between paper towels on a plate in single layer, 1/2-inch apart. Microwave on high for 2 minutes until crisp.
- Toast oats for granola without heating up the oven. Place up to 2 cups of oats in a 9-inch glass pie plate. Microwave on high for 4 to 6 minutes, stirring and scraping every minute until golden brown.
- And here is one just in time for the holidays! Instead of boiling water for mashers, microwave 1 1/2 pounds scrubbed red potatoes in a large glass bowl and cover with vented plastic wrap. Microwave on high for 14 minutes or until tender. Mash and stir in 2 TBSP of butter and 1/2 cup milk.
