30 Days of Grilling Day #15:Grilled Green Tomatoes Foccacia Sandwiches

Most of you know, I grow tomatoes.  Last year, I had lots of green tomatoes, and there are only so many things you can do with them!  I make a few things, Green Tomato Mince Meat and Green Tomato Red Raspberry Jam, but this recipe caught my eye.  I am ready for green tomatoes at the end of the season this year to have it again!  If you are feeling really industrious, the grilled green tomatoes are great when used on the Tomato Herb Foccacia Recipe found on this blog(my first attempt at yeast bread baking!) 
Make sure for this recipe you cut the slices a little thicker, since grilling the slices takes out some of the body of the tomato and you want to have some of that left for your sandwich.
Grilled Green Tomato Foccacia Sandwiches

1 large lemon

½ cup mayonnaise

½ cup coarsely ground black pepper

1 pound (3 medium) unripe green tomatoes, cut into ½ inch thick slices

¼ tsp salt

1 TBSP olive oil

8 slices Canadian bacon

1(about10” x 6”, 1 pound) loaf foccacia bread, cut horizontally in half

Prepare outdoor grill for direct grilling over medium heat. From lemon, grate 1 teaspoon peel and squeeze 2 tablespoons juice. In cup, combine lemon peel and juice, mayonnaise, and pepper. Sprinkle tomato slices with salt; brush lightly with oil. Place tomatoes on hot grill rack and cook, uncovered, 6 to 7 minutes or until browned and slightly softened, turning slices over once. On same grill rack, cook Canadian bacon 2 minutes or until heated through, turning over once. Transfer tomatoes and bacon to platter. Place focaccia, cut sides down, on grill rack. Grill 3 to 4 minutes or until lightly toasted. Assemble sandwiches: Spread mayonnaise mixture on cut sides of focaccia. On bottom half of focaccia, layer tomatoes, then Canadian bacon. Replace top half of focaccia. To serve, cut sandwich into 4 pieces.
