30 Days of Grilling Day #11: Day Late, Sorry!

I am so sorry this post is a day late!  I got home from Fairlawn Library last night and forgot all about it!

I have one ingredient that I really like for grilling, and I really enjoy it with fish.  Can you guess what it is??  Apricot Jam!

Buy regular apricot  jam from the grocery store and use it as a baste or glaze for a variety of fish.  Heat it is a small saucepan to thin it down a little, add some soy sauce and grated fresh ginger, and you have a nice Asian glaze.  Add some orange zest, sprinkle of macadamia nuts and you have a tropical glaze.  See, so many options!

Try this recipe on for size!

Grilled Apricot Fish

1 pound halibut

½ cup apricot preserves

2 TBSP white vinegar

1 ½ tsp chopped fresh tarragon

Brush grill rack with vegetable oil. Heat grill to medium heat. Place fish on grill rack. Cover and grill 5 to 6 inches from heat 10-12 minutes, turning once, until fish flakes easily with fork. Meanwhile, mix remaining ingredients; spoon onto fish during last minute of cooking. Makes 4 servings.
