14 Fun Days of February Day 10: Chocolate Chip Pancakes

What a way to start the day!  Keegan and I made a deal, if he made it through the night with no crying or waking up, we would make pancakes.  He did, so we did!  And I could not think of a better entry for today than a fun breakfast I shared with my boys!(Yes, both of them, Seeley wants to eat ANYTHING we eat, steak, pizza, and chocolate chip pancakes!)  This basic recipe is a great starter for any add-ins, berries, bacon, cheese, chocolate chips.  Enjoy it plain or with your favorite add-in!  (Try bacon bits or crumbled sausage and cheese)

Pancakes

1 1/2 cup flour

3 1/2 tsp baking powder

1 tsp salt

1 TBSP sugar

1 1/4 cup milk

1 egg

3 TBSP butter, melted

1 cup desired add-in

Combine dry ingredients in a large bowl.  In a 2-cup measuring cup, combine milk, butter and egg, stirring to combine well.  Heat a griddle or large skillet and coat with butter or spray with pan spray.  Wipe out with paper-towel to leave a thin layer of oil in pan.  Pour pancake batter onto griddle in 1/3-cup portions.  Sprinkle with add-in.  Let cook until bubbles form around the edges.  Flip with thin spatula and finish cooking, 1-2 minutes more.  Remove to plate and serve.  Makes 8 pancakes.**I did not need syrup with these, they were fine with just the chips.  I served mine with strawberries, but whipped cream would have been good too!

How could I go wrong if this was the face I got afterward? I have so many pictures because I love how these pics turned out!  Yes, that is chocolate on his nose!  Enjoy!
