Apple Cider Waffles

In honor of Waffle Day, I decided to post a whole week of fun waffle recipes!  Enjoy!!!!!

Aren’t these a beautiful color??  They scream fall or cold weather, and their flavor is light but full.

Apple Cider waffles are another easy recipe.  I used just store bought apple cider, but if your hitting the apple orchard, it would be great with some fresh pressed!  I am thinking you could use apple juice as a substitute, but I would add a little more cinnamon.

These waffles do get a crispy crust on them.  The sugar content is high, and almost caramelizes when cooked in your waffle iron, giving the waffles a crispness.  I didn’t have a problem with burning, but I supposse if you started a batch and forgot about it, they would probably burn.  If your going to reheat them in the toaster, they might get a little brown.

I will also be posting a recipe for Buttermilk Syrup which is fabulous with these!

Apple Cider Waffles

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

pinch of salt

1 teaspoon sugar

1 teaspoon cinnamon

½ teaspoon nutmeg

1 egg

1 cup apple cider

Combine flour, baking powder, baking soda, salt, sugar and spices in a large bowl.  Whisk lightly to combine.  Add egg and apple cider, stirring to just combined.  Cook in your waffle iron, following manufacturer’s directions.  Serve with maple syrup, butter, cinnamon, or apple butter.

Rolo Bars: Good Idea, Ok Recipe

Rolos+Cake Mix=good?? Not so much…..

I have recipe fails too.  And this one seemed to be a recipe fail for me, but others seemed to enjoy them.  Maybe I was expecting to much….or maybe I just like my Rolos plain and simple right out of the foil paper.  Maybe I am just a purist.

This recipe was super easy.  The batter is made from a cake mix, and the only time-consuming part is cutting the Rolos in half.  As it baked, the Rolos melted and created a caramel-ly chocolate glaze over the crust.  Warm, they cut easily. Once cooled, it was harder since the caramel got sticky and firm.

If you like Rolos and need a quick dessert, give it a try.  If you do, I would like to know your opinion!

Rolo Bars

1 box (18.25 oz) yellow, vanilla or white cake mix ( I used Duncan Hines), dry

5 oz evaporated milk

1/4 cup butter, melted

40 Rolo Candies, unwrapped and cut in half

Heat oven to 350 degrees F.  Grease a 9×13-inch baking pan.  In a bowl, combine cake mix, evaporated milk and butter.  Stir to combine.  Mixture should be thick and sticky.  Press half the mixture into your prepared pan.  Lightly wet your hands and it will be easier to spread.  It won’t look like you have enough, but it will cover the whole bottom.  Bake 8-9 minutes.  Remove from oven and top with Rolos, cut side down.  Take remaining batter and sprinkle it over the Rolos.  Bake for 20-22 more minutes.  Remove from oven and cool on rack.  Cut into squares.  Makes 24 bars.

Potato Casserole: Simple and Easy

I love anything cheesy……and potato-y……and crunchy.  So this recipe is for me!

Potato Hash Brown Casserole is so easy to make, and tasty!  You can make it ahead of time, and refrigerate it until needed.  I made this with Sloppy Joes one night for dinner and it got eaten!

Some recipes call for cream of chicken or potato soup.  I don’t like that flavor, so I left it out!  This is a good recipe for breakfast or side dish!

Potato Casserole

1 bag frozen hash browns, shredded (you can use them frozen or let them thaw-it will jut be harder to stir everything together if they are still frozen)

1 cup sour cream

1/4 cup butter, melted

1 1/2 cups shredded Cheddar cheese

Salt and pepper to taste

1 1/2 cups cornflakes, lightly crushed

1/4 cup butter, melted

Preheat oven to 350 degrees F.  Grease a 9×13-inch baking pan.  In a large bowl (or I guess you could mix it in the pan) combine the hash browns, butter, sour cream and 1 1/4 cup cheddar cheese.  Add salt and pepper.  Pour into prepared pan and spread.  In a small bowl, combine cornflakes, remaining cheddar cheese and 1/4 cup melted butter.  Stir and spread out over casserole.  Bake 30-45 minutes until warm through and topping is lightly browned.  Serve warm.

**NOTE:  Some recipe have chopped onion in them.  If you like that flavor, add 1/2 cup chopped onion when combining the potato mixture.

Adventures of the Un-Baker: Keegan’s 5th Birthday

There is my baby!  Some of you might remember me pregnant with him, when I first started teaching cooking classes.  I started with I was 5 months pregnant with him and now he is 5!  Full day Pre-K and ice skating lessons, he is growing up fast!  One of his favorite things is Pokemon and that is what he wanted to for for his birthday!

If you know anything about Pokemon, you know the characters come out of Poke-Balls.  That is what he wanted for his party.  This was an easy cake compared to some of the others I have done.

One new thing I tried was baking a cake in a skillet.  I knew I wanted to make layers that were bigger than 8 or 9 inches.  I pulled out my 12-inch skillet and and got to work.

Baking in a skillet was super easy!  The one I used was a standard non-stick, not super thick skillet.  I mixed up my cake mix and pour it into the pan.  One layer took a whole cake mix, so if you want two layers, get two boxes at the store.  Bake according to package directions, adjusting the time as needed.  I found it was fairly similar to baking a 9×13, maybe 5-10 minutes shorter on the cooking time.

Once done, I turned it out onto a rack, and it came out nicely.  I did one chocolate and one white cake.  I would recommend if you are making two layers, bake them seperately, so they cook well.  With both large skillets in the oven at the same time, you may get uneven baking. Let them cool and go to town with the frosting! (In my head I have a really cute Easter basket cake idea with this concept!)

I frosted between the layers, and then got to work on the outside.  Since the ball is red and white, I use the red gel food coloring to get the intense red.  I used a flat tip on my decorating tool to pipe thick ribbons of frosting to the sides and top of half the cake.  I then smoothed it with a knife.  I did the same with the white half.

There is a black line that goes across the middle of the Poke-Ball.  One tip I have learned over the years of (amature) cake decorating is when you need black, start with chocolate frosting.  There is NO WAY to get white frosting the intense black that you want, and using chocolate it only takes a little to get the inky black we like.

Of course I didn’t take a picture of the completed cake without Keegan in it, but you can kind of see it in the picture at the top.  This was easy, and it turned out cute!

Now on to the other cake. Keegan’s birthday party was a few days before his actual birthday, so he wanted another cake on his birthday.   Keegan’s FAVORITE Pokemon character is PigNight.  He is a big ,round pig that shoots fire or something.  If you know anything about Pokemon, you know it is kinda hard to keep track of……more so when your getting your descriptions from a 5 year old.

Here is PigNight picture.  You will see he will be Oh, so easy to make out of cake.

I started with my basic 9×13-inch cakes and a knife.  I knew this was going to be a flat cake, simply because I had some time constraints.  I began cutting, pieced him together, and frosted him in his wide variety of colors.  Here is the end result!

DON’T LAUGH!!  It’s not like he wanted a block for a cake!  It was fun and tested my color-mixing skills!  He loved it!

One last thing!  I decided to make pizza for this birthday party, and made them into PokeBalls too!  I bought plain cheese pizzas from Super Walmart, and put pepperoni on half, extra cheese on the other half, and made the black line in the middle with chopped olives!  They turned out cute and were super easy!

General Tso’s Chicken: Asian Food at Home

My husband and his Asian food.  The craving hits him like a ton of bricks and he can’t get past it until he has some General Tso’s.

I have always thought General Tso’s was to spicy, so I was happy to find this recipe on Juanita’s Cocina .  I have made some changes, but it was a great place to start.

The red pepper flakes are a nice touch, and you can add and subtract according to your level of heat.  I used about 1 1/2 teaspoons and it was a nice heat, not to spicy.

This recipe does dirty a few pots and pans, but it makes a yummy dinner, and is fairly easy to make!  Oh and parson the picture, this was a second helping since I forgot to take a picture of the first serving!

General Tso’s Chicken

1/2 cup hoisin(it took one of the small jars)

2/4 cup white vinegar

2 TBSP soy sauce

1 TBSP Worcestershire sauce

3 TBSP sugar

2 TBSP cornstarch

1 1/2 cup chicken stock

4 boneless chicken breasts, cut into 1-inch cubes

1 tsp vegetable oil

4 cloves garlic, minced

1 tsp dried ground ginger

2 tsp red pepper flakes (more or less, depending on how hot you like it!)

For the chicken:

2 egg whites

3/4 cup cornstarch

1/4 cup flour

1/4 tsp baking soda

Oil for frying

Make marinade/sauce by whisking the first six ingredients in a bowl.  Add 6 TBSP of marinade to a smaller bowl, and add chicken pieces.  Let marinade for 15-30 minutes.  Reserve remaining sauce.  In a medium saucepan, heat 1 tsp oil.  Saute the garlic, ginger and pepper flakes until just aromatic.  Add remaining sauce and simmer, whisking, until it thickens and turns darker in color, 3-5 minutes.  Keep warm off heat.  Drain chicken from marinade and pat dry.  whisk egg whites until foamy.  Place egg white in shallow bowl or pie plate.  In second bowl or pie plate, combine cornstarch, flour and baking soda.  Dip chicken into egg whites then dredge in cornstarch mixture.  In a large skillet, heat oil over medium heat (to about 350 degrees).  Fry chicken pieces on each side approximately 2-3 minutes until golden brown.  Drain on paper towel lined plate.  Toss together with sauce.  Serve over rice.  Serves 4.

***Note:  The General Tso’s my husband always gets comes with broccoli.  I don’t like broccoli, so I cut up some peppers and onions with a little broccoli, and sauteed it.  Tossed with the sauce and chicken, there was enough sauce to cover everything!

Good Morning Everyone!

I know it has been awhile since I posted last, but we have been BUSY!!  Here is a little sampling of what we have been up to!

Apparently Joe and I haven’t been doing much!  Between Keegan’s ice skating lessons, snowball fights, birthday festivities and growing to fast for Mommy to be happy, these boys have been busy!

I promise there are more fun things on the way, and I will be more diligent in posting!  It seems like now that I am working less, I am busier than ever!  But I love it!
