I figured I’d post this great, easy breakfast idea on New Year’s Eve, so everyone would have something fun and yummy to make tomorrow morning after a late night!
So far I have made these Pancake Squares two mornings in a row, and they are easy enough that I could probably make them on a school day too! Simply mix everything together, pour in a pan, and bake. Feel free to sprinkle them with chocolate chips(our favorite!), blueberries, cinnamon, nuts, apples, pretty much anything! Even bacon and cheddar would be good on top!
As you can see, basic ingredients, simple prep, yummy goodness!

Pancake Squares
3/4 cup milk
2 TBSP melted butter
1 egg
1 TBSP sugar
1 cup flour
2 tsp baking powder
1/4 tsp salt
Preheat oven to 350 degrees F. Grease an 8×8-inch square pan. Combine all ingredients in a medium bowl. Pour into pan and top with desired toppings if using. Bake 20-25 minutes (I found 21 was perfect) until lightly golden on top. Let cool slightly and serve.
NOTES** If you want to make a bigger pan, you can double the recipe and it will make a 9×13-inch pan. It may need to cook slightly longer, but you could also add two or three toppings on a big pan!
