Summer is in full swing and this is the perfect side dish for all your favorite summer dishes!
This recipe includes some og the great summer veggies: peppers, mushrooms, spinach. Combine that with orzo and Parmesan and you have a wonderful dish that goes well with everything! I served it with great grilled steaks, but it would be good with chicken, fish, even grilled shrimp.
Orzo with Veggies and Spinach
1 cup uncooked orzo pasta (you can use whole wheat orzo if you can find it)
1 each medium sweet orange, red and yellow pepper, chopped
1 cup sliced mushrooms (I used Baby Bellas)
1 TBSP olive oil
3 garlic cloves, minced
2 cups fresh baby spinach
1/2 tsp Italian seasoning
1/4 tsp salt
1/4 tsp pepper
1/2 cup shredded Parmesan cheese
Cook pasta according to package directions. Cook the peppers and mushrooms in oil in large skillet over medium heat until tender. Add garlic; cook 1 minute longer. Add the spinach, Italian seasoning, salt and pepper; cook and stir 1-2 minutes longer or just until spinach is wilted. Drain pasta. Add pasta and cheese to skillet; heat through. Serves 5.
