Yes, I know how that sounds. Watermelon BBQ Sauce. Yuck.
But when I say trust me, I mean it. The flavor of this sauce is wonderful. The time invested in cooking down the watermelon is TOTALLY worth it. Try it, I promise, your going to like it!
Watermelon BBQ Sauce
1 6 pound seedless watermelon
8 oz tomato paste
1 TBSP onion powder
1 TBSP garlic powder
2 cup brown sugar, firmly packed
½ cup sherry
2 tsp lemon juice
1 tsp liquid smoke
Cut the melon into chunks and place in a saucepan. Cook it uncovered over medium heat until the melon is the consistency of applesauce (approximately 2-3 hours) Stirring occasionally. Add remaining ingredients and simmer uncovered over low heat for 2 hours. Allow to cool to room temperature before using. Good on chicken and fish. This recipe can also be made with yellow tomatoes and watermelon.
